How do I change the default answer, when users are posting in the helpdesk?

Hello, Could you make a screenshot what message do you talk about?

If you talk about message "Thank you for the message, we'll get back to you as soon as possible!" you can change it here https://spiir.userecho.com/settings/email/templates/helpdesk_request_accepted/

Create your own template, then send it to us we will apply it for this message.

I realized that it's probably an auto response from our own mail system.
